Blackened Rockfish with Jalapeño Cilantro Slaw
Quite possibly the best meal I have ever eaten. There is nothing that I love more than fresh Alaskan rockfish. I love it even more than Copper River sockeye--that's saying a lot. Blacken your perfectly cooked fish, roast some yummy corn, then add the slaw. Perfection when served with a lime, cilantro, and/or jalapeno.
- 1 cup sour cream
- 3 Tbsp mayo
- 2-3 cloves garlic
- 1 cup fresh cilantro
- 1/2 tsp sugar honey or agave syrup work as well
- 2-3 jalapeno peppers--remove seeds for less heat
- Juice of 1 large lime
- 1/4 tsp salt adjust to taste
- 1 Bag shredded cabbage or 4-5 cups fresh cabbage
